It is a superfine rice with low stickiness, considered one of the best rices in Italy.

 

Thanks to its roasting and its ability to always remain al dente, it is one of the favorite varieties of great cuisine.

 

It is a firm rice, excellent for risottos, considered “the prince” of rice: it loses little starch but has a good ability to absorb liquids during cooking.

 

Characteristics: large, tapered grains that absorb seasonings perfectly. Widely used for risottos in all preparations.
