The Stizza

The “Stizza” comes from a mixture of ancient grain flours, Magisa rice flour, mother yeast and extra virgin olive oil.

The dough is worked by hand in a completely different way from that of pizza, resulting in a product that has authenticity as one of its strong points.

The long leavening and high hydration of the dough favor the digestibility of the stizza but also its friability and fragrance.
